Samuel Short
For the last 15 years Samuel (Sam) Short has led restaurant groups all throughout the Midwest including The Potent Potables Project, a Michigan restaurant group he co-founded. He specializes in operational innovation focused on technological development and spends a lot of his days integrating operational systems and developing strategic technologies.
During Sam’s early career, right after graduating from Dartmouth College, his passion for food led him to Boston where he started in graduate school and the hospitality industry. His passion for the industry grew, and over the last 25 years he earned his Level 2 Sommelier certification, his Cicerone certification, and led teams to develop more than 30 brands in the restaurant, bar, and brewery world through the early adoption of new technology.
Sam has been featured on the Food Network’s Diners, Drive-ins, and Dives, as well as in Imbibe Magazine and Esquire Magazine for his world-renowned pizza concept “The Cosmos Wood-Fired”. He joined the Michigan Restaurant and Lodging Association Board of Directors in 2015, where he became involved in launching BYOD, an AI software solution whose Virtual Restaurant Assistant, Mabel, uses machine-learning to connect restaurants data to predict and solve problems for operators in real-time. He is currently its Chief Strategy and Product Officer.
In his free time, Sam is a mediocre golfer and enjoys his second job as a sports chauffeur for his children Jack, Cormac, and Maeve, as well as spending time sipping old fashioneds with his wife Meghan.
