Executive Chef Gil Plaster has been the Director of Food and Beverage at The Canopy in Portland, Chef de Cuisine at Cliff House in Cape Neddick, Executive Chef at Portland Harbor Hotel and ran Shula's, a chic seafood and steak house in Coral Gables, Florida. Gil is a native of Miami, Florida, and brings both technical precision and a cosmopolitan worldview to his food. He has been named 2025 Chef of the Year by Hospitality Maine, the trusted voice of Maine's lodging, restaurant, and hospitality industry, recognized for his team leadership, business acumen, and creative consistency in the kitchen. He lives with his family in Spruce Head.
