Boston Born in County Donegal, where his chef father raised hill-reared mountain lamb, Aidan McGee developed an early connection to Irish food, farming, and seasonality. That grounding continues to shape his cooking today — rooted in tradition and refined by modern technique.

McGee trained in multiple Michelin-starred kitchens in London, including Dinner by Heston Blumenthal, Mandarin Oriental Hyde Park (Foliage), and Launceston Place. In 2016, Tatler Magazine named him “Up and Coming Chef of the Year” for his acclaimed reinvention of pub dining at The Truscott Arms. He later served as Executive Chef for the Corrigan Collection, overseeing restaurants across the UK and Ireland, including Corrigan’s Mayfair, led by Irish culinary icon Richard Corrigan.

In Boston, McGee opened The Dubliner in 2022, voted Best Irish Bar in Boston, and is also chef-partner at McGonagle’s Pub & Restaurant, where his modern Irish cooking earned national recognition in 2025 when McGonagle’s was named to The New York Times’ “America’s 50 Best Restaurants.”
